I'm not seeing much value. If you want a lower output impedance than the differential outputs on ESS's eval board a fully differential amplifier can be used in the instrumentation amp's second stage rather than a difference amplifier. If you want a lower noise floor it's probably more useful to implement a standard instrumentation amplifier with gain and use something like a THAT 1606 for common mode level translation and input and output CMRR. It would be interesting to see how noise sims compare if you have the data.
