Military grade has to do with temperature range, reliability and tracking. Military grade has to operate at a wider temperature range and be more reliable. These parts cost more because they are tested more and more data kept on the parts. The higher cost doesn't mean better sound or anything like that. The part also has to be fully trackable in every step from wafer start to end in case of a failure the data can all be analyzed.
