I want to build a RIAA-preamp with balanced output,
based on OP-amps.
Do you people know where I can find some schematics
or datasheets with any exemplifyes?
I have find many but not with balanced output.
So you add a balanced line driver like a DRV-134 or SSM2142 or you could just use a dual opamp for each channel with one amp as an inverter. The gains need to be identical so don't forget the gain of the inverting amp is the ratio of the resistors but the non-inverting gain is that same ratio plus 1.
Check out the DRV or SSM datasheets for details using line driver chips.

You could use a TI OPA1632 differential opamp.
You can find a schematic on page 21 here (but I haven't checked if the amplification is 1x or something else to better suit the rest of the circuit):
