I'm pretty darned sure you can't just do what you describe.
Hunt the board for a schematic with a center-tap transformer, then modify the power supply board appropriately. Right off the bat, I'll guess that you won't need four of the MUR860s.
This may also screw up the snubber circuit, since the rectification pulses will be different. Consult CarlosFM.

Which one of Brian's kits are you using?
If you are using the 3875 kit, take a look at page 15 of his assembly manual. It shows a hookup using a center tapped transformer. But that is for his older style power supply board, not the new snubberized one.
That at least may point you in the right direction.
