This is a very well covered point, but two grounds are used to separate the signal current from the power source. The two grounds are then linked together (with a thin wire to help prevent the larger power current flowing back and infecting the signal ground).
Most people building gainclones use two grounds per channel as the power star ground should be placed as close to the 1000uF caps as is humanly possible, as this keeps the signal path short and makes for a better sounding amp.
