I'm currently using a DS1807 as an attenuator, considering switching to a PGA2311. I have the DS1807 reporting wiper positions back to the microcontroller so that it can verify that everything is working as expected. Can the PGA2311 do this? I'm not seeing mention of it in the datasheet.

No it doesn't. There are other similar parts like the CS3318 where you can read back any register content.
I've been using the CS3318 but never had the need to read back any setting.
Normally you setup the values in your controller then write to the chip, so you always have the actual setting in your controller variables or memory.
Or do you have another reason?

I mostly want the feedback for troubleshooting. The volume indicator is based on the wiper positions given by the digipot now. That way, if anything between the microcontroller and digipot ever fails, the volume indicator will reflect that.
I'll have to decide if that's a dealbreaker for me using that chip.
