How much more VA/Watts can I run off that transformer without a problem? I want to add a sub later on. Could I get away with another 60 to 120 watts? I'm in the US with 120V 60hz, so according to their spec it should be rated at 360VA right? And what I've got now is 120watts... so 240 total on a 360 transformer?

In practice (meaning normal programme material) I think it will be fine.

Designing and specifying amps for continuous max rated output is a whole different ball game (and most commercial stuff isn't specified to be used like that either).
 
a 300VA transformer will give good to adequate per4formance when powering amplifier totally from 150W to 300W.

eg,
5off 60W amplifiers could work very well from a single 300VA transformer, if you choose the correct voltage and (much more difficult) get the grounding correct.
