Excuse me if this has already been answered, however, I am new to the forum.
With an AC power lines wired, you have the following:
AC GND AC
Usually, when wiring these to an adjustable or gainclone power supply, you connect one AC main to the fuse, and the fuse to the transformer, and the other AC main to the transformer (both x-fromer connections are usually black, eh?)
Where is the ground from the AC mains best wired to?
I am thinking that it should be (on a positive/negative supply) wired to the reference point between the positive and negative voltages on the supply.
Is this correct?

No, wire it to the chassis. This is normally done by soldering or attaching to a lug or bolt which is threaded through the chassis.
Actually, since it is the safety earth ground, it should be either bolted or welded to the chassis, never soldered.

I will wire the Earth Ground to the chassis via a lug.
Also, I will read the entire gain clone construction manual, and hopefully that will help me foresee future dilemmae such as this one and answer a few lingering questions.
