In an Opamp if I have + 15v in one rail and -14v in the other, this may cause distortion (even at low level) ?
(I'm using lm 317 and 337)

I don't think so but I may be wrong.
Of course, you'll get non-symmetrical clipping. I have used non-symmetrical bipolar supplies on some of my video distribution amplifier designs when I don't have quite enough voltage from the PSU. In that case, I had +10 volts and - 5 volts on the rails.

So, a part of clipping, there is no sense to put a multitrimmer on one leg of the supply regulator to get the same output voltage equal to the other?

easier to use a parallel resistor to adjust the output voltage.
