i'm lost as how i calulate/measure the transformer inductance, transformer capacitance and diode capacitance, so that i am able to calulate the snubber R and C.
Has anyone calculated their own snubber values?

Seriously though, to find the leakage inductance short the primary and measure the inductance across the secondary. To find the leakage capacitance, measure the primary to secondary capacitance. A Heathkit RLC bridge (or a more expensive one) should do OK.
The diode capacitance will be specified in the manufacturer's data sheet. Of course, the junction capacitance is a function of the voltage across it so you have to guess.
