usually the headphones output serves the same function. I've only seen ONE portable CD player (and this was a rather old one, and a decent quality unit too) that had seperate line out (fixed output) and headphones (had a volume control).
If you are going through one of those "stupid tape thingies" that look like a tape but have a headphones cabel on them, just plug it into the headphones out on the MP3 player, and set the volume (on the player) to about halfway. Then just adjust the volume on the MP3 until it's about as loud as a regular tape. The goal is the highest level into the tape deck before it distorts.
Similar procedure for a FM radio transmitter. Sometimes they have auto level adjust. Adjust until it's similar in volume to an FM broadcast, or turn it up until it distorts and then back of (some transmitters have an "overdrive"/"clip" light)
If you want to use the RCAs on the back of the head unit, get yourself a cable with a 1/8" headphones plug on the end, and then two male RCAs at the other end. adjust MP3 player level until the volume matches other tapes and radio.

check out the iRiver hp-1xx series players. they sport both analog and optical line-outs.
