These were Too Neat to pass on, so I got 2..So Now, what do I have to Make to Feed them off my Speaker Jacks and make my own Stereo Power Meters? When they get here maybe I'll have a better Idea how they Work.

You need to determine the characteristics of the meter. Has it a built in shunt or series resistor that needs removing.
You can either do active or passive. Passive is easy, but not so sensitive. Active as expected uses some additional powered circuitry such as, Peak Reading Audio Level Meter Passive and active here, VU And PPM Audio Metering
